Every olive we use is grown organically, and comes from farms that have adopted EC Regulation no. 2092/91, undertaking to use only organic fertilisers and natural minerals to rise to the agronomic challenge. We use these special olives to produce an oil that boasts a series of unique features, and the very aroma the fruit gives off during the process is a marvel for the senses. The taste test never fails to live up to our expectations and it is ample reward for all our hard work.
How we process organic olives at Frantoio Gentili
At Gentili Farm, the organic olives arrive from the fields of our trusted farmers between 6 and 12 hours after harvesting.
We’re always at the ready to set the oil production process in motion: all the machinery is washed carefully to prevent the olives and oil from coming into contact with the oil produced in the traditional way; our staff makes sure each stage of the oil extraction process is carried out with the utmost care.
We are convinced that when it reaches your table, you’ll actually be able to taste all the hard work, painstaking care, attention to detail and delicate touch we put into crafting our Frantoio Gentili.
The Organic oil that remains here on the premises is stored in steel tanks in a nitrogen atmosphere; this procedure helps to protect the oil from phenomena that might damage the quality, such as fermentation and oxidation.
